QUINOA SALAD



Having a hard time adding this superfood QUINOA into your diet??

Try this Green Quinoa Salad recipe and let the flavors unravel. Super delicious summer salad is waiting for you with the crunchiness of cucumbers, tenderness of zucchini, the sweetness of pineapple and freshness of lemon. And to spike up the flavours to a whole new level add a hint of basil. 

Make this quinoa salad more interesting by adding greens of your choice. I would have added celery too, but I didn't have it on hand at that time. 

It is so healthy, filling and fresh.

QUINOA SALAD RECIPE 

INGREDIENTS


  • 2 cups cooked quinoa (red or white )
  • 2 cups finely chopped zucchini/squash
  • 2 cups roughly chopped spinach
  • 1 cup boiled peas
  • 1 cup chopped cucumber 
  • 1 cup chopped pineapple(optional)
  • 5 cloves of garlic chopped 
  • 1 teaspoon ginger grated 
  • 1 lime/lemon juice 
  • Olive oil 1 tablespoon 
  • Salt and pepper to taste




METHOD 
  • Cook quinoa as per the instructions on the package and keep it aside.
  • Heat oil in a large frying pan over medium heat. Add garlic and ginger. Cook for about 30 seconds until fragrant.
  • Add zucchini to the pan and toss until coated with oil.Cook it for a minute or two. The edges will start turning brown. Do not overcook it. 
  • Add peas, salt and pepper as per taste and mix. 
  • Add spinach and cover the flame. Turn of the stove. The heat will wilt down the spinach. Also, toss in the quinoa. Let this mix cool down completely.
  • Once it is cooled down, in a large bowl mix it with  rest of the ingredients.


STEP BY STEP WITH PICTURES 


Cook quinoa as per the instructions on the package.

Add Quinoa. Mix and let the mix cool down completely.

Add the rest of the ingredients and toss everything together.
