CORN AND BEAN SALAD



Summer heat is soaring up and so is the craving for salads. This black bean and corn salad/salsa is loaded with seasonal and colorful veggies. The flavors of summer are shouting loud with fresh cilantro, red juicy tomatoes, avocados and lemons.Corn adds color, sweetness and texture to any meal and black bean is a protein rich supper food. We just can't go wrong with this salad.

It is super Healthy, super  Fresh and super  Delicious. And Yesss Party lovers it is going to be a big hit as it is one of the most delicious and mouthwatering salad you will be offering your guest. It is perfect for summer gatherings, potlucks, cookouts pretty much perfect for any occasion. 

Best part, 15 minutes is all it takes from cutting veggies to tossing it up. And you have light, crunchy veggie packed salad right to be served.

So let's get started. 


CORN AND BLACK BEAN SALAD

INGREDIENTS: 


  • 2 cups cooked black beans 
  • 1 cups frozen corn kernels (cook as per package instructions) 
  • 1 medium red onion chopped
  • 2 small tomatoes chopped 
  • 1 avocado cut into small chunks
  • 1 jalapeno pepper finely chopped  
  • 2 teaspoons roasted cumin powder 
  • handful finely chopped cilantro
  • 1lemon juice 
  • Salt to taste 
  • Red chilli sauce to taste
  • 1 teaspoon honey or sugar optional 
Feel free to add your favourite veggies (peppers, cucumbers whatever floats your boat ) :-)








































METHOD :

  • In a large bowl toss everything together. Refrigerate for at least a 1/2 an hour for the flavours to combine and for a chilled salad 
  • Enjoy it as a dip or salad or salsa
