KHICHDI RECIPE



In Ayurveda,(Indian Healing Science) Khichdi is considered Sattvik meaning pure. It has the power to heal many diseases as it is warm, light and restorative. Usually in Khichdi we use green split moong dal and basmati recipe. But for today I am using yellow toor dal(lentil) and dalia also known as broken wheat/cracked wheat. Also, we will be adding a lot of veggies and spices and a SECRET ingredient :-). No more it will be called as food to which many of us turn when illness calls. 

Toor dal has an immense amount of dietary fiber that helps to regulate bowel movements. Dalia also known as cracked wheat or broken wheat is low in calories and high in nutritional value. It is full of fiber and other nutrients like zinc, niacin, iron, Vitamin K, Vitamin E, folate, and others.


KHICHDI: How to make toor dal and dalia khichdi.


INGREDIENTS


  • 1 cup Toor Dal ( Yellow Lentils)
  • 1 cup Dhalia (Broken Wheat/ Cracked Wheat)
  • 2 tablespoon Chana Dal
  • 1 cup boiled Green Peas
  • 1 Cup finely chopped Red Onion
  • 1/2 cup finely chopped Tomatoes
  • 1 cup diced Green Capsicum 
  • Juice of freshly squeezed Lemon (Optional)
  •  FreshCoriander ( Hara Dhania ) for garnishing
SEASONING:

  • 1 teaspoon mustard seeds (Rai)
  • 1 teaspoon Cumin Seeds (Jeera)
  • Pinch of Asafoetida (Hing)
  • 1/2 teaspoon Turmeric (Haldi)
  • 1 teaspoon Red Chili Powder (Lal Mirch)
  • 1 tablespoon Pav Bhaji Masala 
  • 1 teaspoon Sugar (Optional)
  • Salt to Taste 


METHOD


  • Take Dalia and Dal together in a bowl and rinse 2 - 3 times under running water. Let it soak for an hour. If you are running late add hot water and let it soak for half an hour
  • In small bowl rinse chana dal with water and keep it aside.
  • Pressure cook dal and dalia. 
  • In a separate cooking vessel add ghee and warm it on medium heat. Once it is warm ad mustard seeds, cumin seeds. 
  • Once the seeds start popping add Asafoetida and chana dal. Roast it for 2 minutes until it turns golden brown.
  • Now add onion and fry for 2 - 3 minutes until the edges turn a little brown. 
  • Add tomatoes, peas. Cook for 1 minute
  • Add green pepper. If you like the crunchier taste do not cook it just start adding the spices.
  • Add turmeric, chilli powder, pav bhaji masala, sugar, salt.
  • Add water to adjust the consistency of khichdi. If you like thick texture add less water and if you like runny khichdi add more.
  • Cook for 2 - 3 minutes.
  • Turn off the stove and garnish with coriander and add the lemon juice.Mix well.
  • Cover the vessel for 5 minutes.
  • Serve hot with a dollop of Ghee. Accompany it with raita, kadhi or papad. Yummm!!!
