INSTANT HANDVO RECIPE



Handvo/Handwa is a famous Gujarati dish. Traditionally it is made with lentils and rice. But today we will keep it real simple and make an Instant version of it. Mornings are always busy and we both(me and hubby darling) are in a rush. Having tea daily with a slice of bread is monotonous and that's why I experiment a lot and try to make instant versions of breakfast items which needs less assembling and less time. Instant versions of traditional recipes (which otherwise would consume a lot of time)  have made it simple for people like us who can't invest a lot of time in the kitchen. Some of us are working, some have kids and some just don't feel like. Whatever the reason is we don't have to worry as there is an array of recipe innovations floating everywhere which take very little time and taste delicious. 

This Instant Handvo version does not need soaking lentils overnight, no need of grinding, even it doesn't need to be baked. It is a pan fried version. It is quick, healthy and satisfying. You can load it up with your favourite veggies. Spinach, Fenugreek leaves, onion, tomatoes, corn, pretty much any veggie you feel like. Whatever floats your boat :-)

Let's get started. 

INGREDIENTS:

  • 1 cup suji (semolina)
  • 1/4 cup besan (chickpea flour)
  • 1/2 cup yogurt
  • 1 teaspoon turmeric
  • 1 teaspoon red chilli powder
  • Salt to taste
  • 1 teaspoon sugar(optional)
  • 1 medium finely chopped onion
  • 1 teaspoon Eno
  • For tempering  2 tablespoon oil, 2 teaspoon mustard seeds, 1 tablespoon sesame seeds or more if you like it.


METHOD:

  • In a bowl add suji, besan, yogurt, turmeric, salt, chilli powder, sugar, onion and mix. Add water to adjust the consistency of the batter. It should have medium consistency neither too runny nor too thick.
  • In a frying pan heat oil and add mustard seeds and sesame seeds. Let them splutter.
  • Add Eno only when you are ready to pour the batter. 
  • Spread the batter evenly on the nonstick pan. 
  • Cover the pan and let it cook on  low flame for about 7-8 minutes. Check if the crust is golden brown and crispy it's time to flip it on the other side
  • Place a plate on the pan and turn it upside down.
  • Now slide the uncooked side on the pan and let it cook for another 3 - 4 minutes.
  • Once both the sides are cooked, cut it into pieces.
  • Serve hot with tea/coffee.
