EGG LESS VANILLA CAKE ( MADE WITH WHEAT FLOUR )




 Happy Mothers Day to all of you :-). Lets celebrate this auspicious month which I dedicate to all the beautiful mothers out there,  with Egg less Vanilla Whole Wheat Cake, yes you heard it right this cake is made with 100%Stone Ground Whole Wheat pastry flour and not white flour. It has the same texture and fluffiness which we get when we make the cake with white flour. So why not try substituting white flour with healthier versions. 






I topped this cake with whipped cream some fresh fruits and cacao nibs which added a lot of flavor to the plain cake. 

So lets gather all the ingredients :

Ingredients

  • 2 cups Wheat flour. 
  • 1 can condensed milk ( 14 oz ).
  • 3/4 cup softened butter. ( I used salted butter so no need to add salt later :-) ) 
  • 2 teaspoon baking powder.
  • 1 teaspoon baking soda.
  • 2 teaspoon vanilla extract. 
  • 1 cup milk. 


Instructions




* Preheat the oven at 350 F ( approx 180 C ) for 15 minutes.


* Sift the wheat flour, baking powder and baking soda in  a large bowl.


* In another bowl mix condensed milk, vanilla extract, and butter. 


* Stir well until combined.Now mix gently the wet ingredients with dry ingredients.


* At this point add milk, the  cake batter should be of a dropping consistency. 


* Pour this into a greased (7 or 9") diameter cake pan. Tap the pan  to even out the cake batter and also to break any air bubbles.


* Place the tray on middle rack in preheated oven.


* Bake it for 20 minutes and then keep an eye on it. It takes 25 to 30 minutes to bake completely.


* Insert a toothpick in the center of the cake to check if it is done completely, it should come out dry and clean .


* Take it out of the oven and place the pan on a wire rack and let  the cake cool down in the pan for 15 minutes. 


* Run a knife between the pan and the cake.Then coat the wire rack with a cooking spray or grease it and turn the cake upside down  on the wire rack. 


* Tap to release the cake. 


* Once the cake completely cools down its ready to be served.


* Cover it with some whipped cream and top it with    your favorite toppings. I used strawberries  and cacao chocolate nibs.









Note: 



* It does not come out absolutely white as you expect from cakes        made with white flour. But it has great taste and texture.

* The cake is not super sweet as I used whipped cream over it, the      sweetness was perfect.
