Presenting you the coconut spiked sooji ka sheera or halwa. My variation of suji ka halwa but this time with a twist. Why I say its coconut spiked is because it has an immense coconut flavor added to it. I have been substituting ghee with coconut oil in many of my recipes.I love ghee( clarified butter) but I love coconut oil too and its my second favorite. So I thought why not give it a try. I also substituted regular sugar with coconut palm sugar which has many health benefits and it has a lower glycemic index than traditional white sugar. The result was amazingly good. If you are someone who has the flare for coconut flavor you will definitely going to love this variation.
Lets Get Started....
1 cup sooji (rava, semolina flour)
1/2 cup coconut oil
1/2 cup coconut palm sugar
1/2 cup white sugar
3 cups water
2 tablespoon lightly roasted Cashews ( for garnishing )
1 tablespoon dry coconut ( for garnishing)
Boil the water in a separate vessel and set it aside.
Melt the coconut oil in a frying pan on medium heat.
Add sooji and roast to golden brown color on medium heat, stir constantly.
Once sooji is golden brown add the warm water slowly.
Turn down the heat to medium low and let it cook for about 1 minute.
Add both coconut palm sugar and white sugar. Let it cook for 2-3 minutes.
Garnish with dry coconut and cashews.
