Salads have been on my mind recently. Last year I went to India for my brother wedding and gained a lot of weight ;-) which obviously now I am trying to shed. So salads came to my rescue and I stared searching for recipes which are not boring as traditional salads of cucumber, onion and tomatoes. I like variations and wanted to experiment with different permutations and combinations. I love avocados and so this salad recipe is dedicated to my love affair with my adorable fruit Avocados :-)
The crunch of onions and softness of avocados is a die for amalgamation. I also added some tomatoes and cilantro to spike up the flavors. Last but not the least it has a sprinkle of black pepper , cayenne pepper , my all time favorite Himalayan salt and yes a drizzle of extra virgin olive oil for the final finishing touch.
So folks this is a quite simple and straight forward recipe but I still thought I should share this with you all :-)
You will need:
*1 large Avocado
*1 medium sized tomato
*1/2 medium sized onion ( I used white one but red will be great too)
*1 tablespoon cilantro
*1/2 lime juiced
*Salt and pepper to taste ( cayenne pepper is optional, if you like spicy stuff ;-) )
*Drizzle of extra virgin olive oil
*Cut avocado in cubes
*Chop tomatoes, onions and cilantro.
*In a medium bowl combine avocado, onions, tomato, cilantro , salt, pepper, lime juice and olive oil.
Enjoy with some tortillas or chips of your choice !
